Crunchy, sweet, and bursting with color! Our oven-baked Fruity Pebbles French Toast is a fun meal that combines two breakfast favorites: Fruity Pebbles cereal and classic French Toast. You can have this delicious dish on the table in less than 30 minutes!

There’s not much better than a stack of hot, fluffy buttermilk pancakes or warm cinnamon rolls fresh from the oven.

Sometimes John and I like to mix things up and toss in a batch of french toast with scrambled eggs and bacon, too.

When we really want something fun, we make our Fruity Pebbles french toast recipe. 

Thick slices of Texas toast get dipped in a sweet egg batter then tossed in a crispy cereal coating. Bake it up, drizzle with some maple syrup and top with whipped cream!

Tips for the Best Fruity Pebbles French Toast

Tips

Avoid Soggy Bread: Don’t let the slices of bread soak in the egg mixture for too long. A quick 2-3 second dip to coat both sides works great.

Even Spacing: Arrange the bread slices on the baking sheet with enough space between them to ensure even cooking. The sides won’t cook properly if the bread is overcrowded.

Baking Sheet Preparation: Use parchment paper or a silicone baking mat to prevent sticking and make cleanup easier.

Heavy Coating: Press the cereal pieces into the bread to form a thick coating. Some of the cereal will fall off when the bread gets flipped, so the more you add the better.

How to Make Fruity Pebbles French Toast on the Stove Top

Start by preparing the ingredients just as you would for the baked version (listed below in the recipe card). 

Instead of preheating the oven, follow these steps:

Heat a Skillet: Place a large skillet or griddle over low heat and let it warm up. Add a bit of butter to the skillet and allow it to melt, spreading it evenly to coat the surface.

Cook the French Toast: Place the prepared slices of bread (dipped in the egg mixture and coated with Fruity Pebbles) onto the skillet. 

Cook on Low Heat: Cook the french toast over low or low-medium heat making sure that the cereal coating doesn’t burn while the inside cooks. 

Flip and Continue Cooking: After 2-3 minutes, once the bottom is golden brown and crispy, flip each slice with a spatula. Cook the other side until it’s also golden brown and the french toast is cooked through.

Adjust Heat if Needed: If the French toast is browning too quickly, reduce the heat slightly to prevent burning the cereal. It also helps to wipe the pan clean after each set cooks.

Serve Immediately: Once both sides are perfectly cooked, remove from the skillet and serve immediately with your choice of toppings.

If you don’t have Texas toast on hand, there are several great alternatives you can try.

Thick slices of brioche, challah bread, or even a sturdy French baguette will work wonderfully.

Absolutely, you can leave the cereal pieces whole! Keeping the Fruity Pebbles intact will give your french toast a different texture and visual appeal.

If you don’t have a food processor, place the cereal in a zip-top bag and crush it with a rolling pin or the bottom of a heavy pan.

If you have leftovers, store them in an airtight container in the refrigerator.

To reheat, place the french toast slices on a baking sheet and warm them in a preheated oven at 350°F for about 5-10 minutes to regain some of the crispiness.

Ingredients

For the French Toast:

  • 1 ½ cups milk
  • 6 large eggs
  • ¼ cup granulated sugar
  • ¼ teaspoon vanilla extract
  • teaspoon ground cinnamon
  • Pinch of salt
  • 4 cups Fruity PEBBLES™ Cereal
  • 8 slices Texas toast, or other thick sliced bread

Optional Toppings:

  • Maple syrup
  • Whipped cream
  • Butter
  • Powdered sugar
  • Fresh fruit
  • Cream cheese glaze

Instructions
 

  • Preheat the oven to 425°F, and line a large baking sheet with parchment paper. Depending on the size of the baking sheet, it may be necessary to use two in order to keep the sides of the bread from touching.
  • Place milk, eggs, sugar, vanilla, cinnamon, and salt in a blender. Process until well combined.
    1 ½ cups milk
    6 large eggs
    ¼ cup granulated sugar
    ¼ teaspoon vanilla extract
    ⅛ teaspoon ground cinnamon
    Pinch of salt
  • Pour the egg mixture into a wide, shallow bowl. Set aside.
  • Place the cereal into a food processor, and pulse a couple of times to break it down into smaller pieces. Transfer the cereal into a second shallow dish.
    4 cups Fruity PEBBLES™ Cereal
  • One at a time, dip each slice of Texas toast into the egg mixture, about 2-3 seconds per side. Let any excess drip off.
    8 slices Texas toast
  • Press each dipped bread slice into the crushed Fruity Pebbles, coating both sides evenly. Make sure to gently press the cereal pieces into the bread so they stick.
  • Place the coated bread slices on the prepared baking sheet making sure that the sides don't touch.
  • Bake for 14-16 minutes, flipping halfway through, until the french toast is golden brown and crispy.
  • Serve immediately with your favorite toppings.
