Mini Egg Cookies

This soft, chewy Mini Egg Cookie recipe is so easy, it’s the perfect dessert to let the kids help out with.

Ingredients

– unsalted butter  – granulated sugar – light brown sugar – egg – vanilla extract – all-purpose flour – cornstarch – baking soda – kosher salt – mini eggs

Step 1

Cream together butter & sugars until light and fluffy. Beat in the egg & vanilla extract.

Step 2

In a separate bowl, whisk together flour, cornstarch, baking soda & salt.

Step 3

Add the dry ingredients to the wet ingredients & mix until just combined.

Step 4

Carefully fold in the mini egg pieces.

Step 5

Form dough into balls & refrigerate for 30 minutes.

Step 6

Bake until they are slightly brown on top.
