Simple syrup recipes are some of my absolute favorite things to make. In fact, John and I keep a steady supply of our basic simple syrup in the fridge. We like to use it for homemade sodas and other beverages, so it’s good to keep some handy.
Simple syrups are great because you can adapt them by using different flavors, and the sky’s the limit! Most of the time, we use fresh or frozen fruit, but over the last few years, we’ve been exploring different flavors such as mint, ginger, and this lavender syrup.
Lavender may sound elegant, and a little different in terms of food, but it works really well to add light, sweet, floral notes to drinks, desserts, and pastries. This recipe is one of my personal favorites. I hope you love it, too!
How to Make Lavender Simple Syrup
- Combine the water and granulated sugar in a medium saucepan.
- Heat over medium-high heat, and stir until the sugar dissolves (about 3-5 minutes).
- Remove from heat, and stir in the lavender.
- Let the simple syrup steep for 30 minutes to 1 hour, and taste the syrup around the 30 minute mark. If you’d like it a bit stronger, steep for longer.
- When the syrup finishes steeping, strain it through a fine mesh sieve. It’s helpful to line the strainer with a cheesecloth to make sure all the smaller pieces don’t slip through.
- Store in a sealed mason jar until ready to use.

Tips
- Don’t boil the lavender! Boiled lavender may become bitter and cause the simple syrup to taste unappetizing.
- Use culinary grade lavender. Culinary or food-grade lavender is a type of dried lavender flowers that are safe to use in food and cooking applications.
- Make extra! If you love this recipe, make an extra batch. This recipe easily doubles or triples, so it’s easy to make as much as you need.
Storage
- Refrigerator: Store leftover lavender simple syrup for up to 2 weeks in an airtight container in the refrigerator.
Ways to Use Homemade Lavender Syrup
There are so many ways to use lavender simple syrup. Here are some of my favorites:
- Add some to a baked cake to keep it from drying out and to add a touch of lavender flavor.
- Pour a tablespoon or two into your favorite latte to make a lavender latte.
- Use it to sweeten a batch of lemonade and have lavender lemonade.
- Make a homemade lavender soda.
