Pineapple Rum Punch

Simple Pineapple Rum Punch Recipe
Pineapple and coconut is one of my favorite flavor combinations. Not only are these flavors classic for cocktails like a piña colada or my pineapple coconut margarita, but they also taste great in smoothies, cakes, and pies, too!
If you these flavors as much as I do, you’re in luck! This pineapple coconut rum punch uses pineapple juice and coconut rum for the main ingredients. Just pour, stir, and enjoy! It doesn’t get easier than that!
How to Make This Easy Rum Punch
Everything goes straight into a large pitcher filled with ice, which makes prep a breeze. I mix the pineapple juice, coconut rum, gold rum, and lime juice first. Then, I hold off on the ginger ale until I’m ready to serve. That way the punch doesn’t go flat.
I like to serve it in whatever glasses I have on hand with a few pineapple wedges or lime slices for garnish. Nothing fancy, just enough to make it feel finished.
Easy Recipe Variations
You can adjust this party punch based on what you have or the kind of flavor you’re going for. It’s a cocktail that is fairly well balanced as-is and doesn’t have a strong alcohol taste. Here are some suggestions if you want to change things up:
- If you want to cut down on some sweetness, try adding ginger beer instead of ginger ale. Ginger beer is non-alcoholic and has a bit of a bite. It will add a stronger ginger flavor to the punch.
- Use coconut water instead of coconut rum or add it in addition to coconut rum. For a creamy texture, add some cream of coconut. This will add a sweeter flavor.
- Use pineapple flavored rum in addition to coconut and gold rum, or use it to replace the gold rum.
- Try Sprite or 7-Up in place of ginger ale.
- Add some maraschino cherries and a touch of grenadine for color and sweetness.
- Swap the lime juice with orange juice for a milder citrus flavor.
Making a Smaller Batch or Saving Leftovers
This pineapple rum punch is made for a crowd. Everything mixes up in a big pitcher, which makes it great for parties. But if you’re just making drinks for one or two people, it’s easy to scale down.
Here’s how I do it for two servings:
- 1 cup pineapple juice
- ½ cup coconut rum
- ¼ cup gold rum
- 2 tablespoons fresh lime juice
- Top each glass with ginger ale just before serving.
And, if you happen to have leftovers, you can pour the extra into an ice cube tray and freeze it. We do something similar with our tropical booze cubes!
Those little punch cubes are great dropped into a glass of ginger ale or club soda for a quick drink later on. You can also use them in place of ice the next time you make a batch of this rum punch, and it won’t get watered down.

For a Pitcher:
- 4 cups pineapple juice
- 2 cups coconut rum
- 1 cup gold rum
- ½ cup fresh lime juice
- 2 cups ginger ale
For 2 Servings:
- 1 cup pineapple juice
- ½ cup coconut rum
- ¼ cup gold rum
- 2 tablespoons fresh lime juice
- Ginger ale, enough to top off the glass
Instructions
To Make a Pitcher:
- In a large pitcher filled with ice, combine the pineapple juice, coconut rum, gold rum, and lime juice.4 cups pineapple juice2 cups coconut rum1 cup gold rum½ cup fresh lime juice
- Stir well to combine.
- Just before serving, stir in the ginger ale.2 cups ginger ale
- Pour into glasses and garnish with lime slices or pineapple wedges, if desired. Serve immediately.
To Make 2 Individual Servings:
- In a small mixing glass or cocktail shaker, combine the pineapple juice, coconut rum, gold rum, and lime juice.1 cup pineapple juice½ cup coconut rum¼ cup gold rum2 tablespoons fresh lime juice
- Stir well and pour into glasses filled with ice. Top each with ginger ale, and stir to combine.Ginger ale
- Add your favorite garnishes, and serve immediately.
Notes
- Servings: The calories listed are an approximation based on the ingredients in the recipe card and a serving size of just under 1 1/4 cups of punch. Actual calories will vary.
- Rum: Feel free to swap either the coconut rum, gold rum, or both for another flavor of rum (pineapple, silver, more coconut rum, etc.). I don’t recommend using spiced rum in the punch.
- Soda/pop: If you don’t want to use ginger ale, try 7-Up or Sprite. Ginger beer is another great option.
