How to Make Chocolate Covered Bacon
- Using a griddle or skillet (or oven) cook the bacon according to the package directions, until the bacon is nice and crispy.
- Let the bacon cool completely on a cooling rack. Either use a baking pan to catch the grease drippings or pat off excess grease using a paper towel.
- In a microwave safe bowl melt the chocolate chips for 1-2 minutes. Stir at 30 second intervals.
- Add the coconut oil to the chocolate and heat for another 15-30 seconds. Stir to fully combine.
- Prepare a large baking sheet with parchment or wax paper.
- With the bacon cooled and the chocolate melted, dip each strip of bacon into the chocolate, leaving about one inch of space at the top. Use a spoon to help drizzle and coat both sides of the bacon in chocolate.
- Once dipped, place each piece of bacon on the lined baking sheet and repeat the process with the rest of the bacon strips and chocolate.
- Place the baking sheet in the fridge to let the chocolate set, serve, and enjoy!
