Lemon Icebox Pie

This tart, tangy and creamy Lemon Icebox Pie is perfect for poolside dessert on a hot day.

Ingredients

Crust: – graham crackers – light brown sugar – ground cinnamon – ground ginger – sweetened       coconut flakes – unsalted butter

Ingredients

Filling: – cream cheese – sweetened     condensed milk – sour cream – lemon juice – lemon zest Toppings: – whipped cream  – lemon slices

Step 1

Pulse graham crackers, brown sugar, cinnamon, ginger & coconut flakes in a food processor.

Step 2

Blend in the butter. Press mixture into a pie dish. Bake the crust.

Step 3

Combine the cream cheese and condensed milk until smooth.

Step 4

Add the sour cream, lemon juice & lemon zest.

Step 5

Pour the filling into the crust.  Chill for 4 hours.
