Add the bacon to a heavy bottom saucepan or a small Dutch oven. Cook over medium heat until the bacon is crispy.

Use a slotted spoon to remove the bacon to a paper towel lined plate. Drain all but 2 tablespoons of grease from the pan.
Add the butter and onions to the pan and cook until caramelized, about 10-15 minutes.

Stir in the bourbon, brown sugar, salt, pepper, paprika and cayenne and let it simmer until all the alcohol is cooked off, about 5 minutes.
½ cup bourbon, ½ cup light brown sugar, ½ teaspoon salt, ½ teaspoon ground black pepper, ½ teaspoon smoked paprika, ⅛ teaspoon cayenne pepper
Stir in the maple syrup and let it simmer for another 2-3 minutes then stir in the bacon. Remove the pan from heat before serving warm over toasted baguette slices.
