To make the syrup, stir together the brown sugar, water, cinnamon and vanilla in a small saucepan over medium heat. Let it come to a light boil for about one minute then remove the pan from the heat, and let it cool completely.
½ cup light brown sugar, ½ cup water, ½ teaspoon ground cinnamon, ½ teaspoon pure vanilla extract
Once ready add a tablespoon of the brown sugar syrup to a cup then add the ice.
1 cup ice
Pour over the espresso and stir to combine. Pour in the oat milk and serve.
