Heat a grill or griddle over medium heat. Brush the hot griddle lightly with oil, salt and pepper both sides of the chicken, and place the chicken on the griddle.
Cook the chicken for 7 to 8 minutes on each side until the thickest part reads 165°F on an instant read thermometer and the juices run clear. Remove the chicken from the griddle and place on a plate. Cover with foil.
While the chicken cooks, saute the mushrooms. Heat a medium skillet over low to medium heat. Add the butter and mushrooms, and cook for 6 to 8 minutes or until the mushrooms soften. Set aside.

Preheat the oven to 250°F, and place the chicken breasts in a baking dish or on a baking sheet. Layer the mushrooms over the chicken breasts. Place two pieces of cooked bacon on each breast over the mushrooms. Sprinkle shredded cheese evenly over the bacon.

Transfer the dish into the warm oven just long enough to melt the cheese. After the cheese melts, remove the pan from the oven, top the loaded chicken with chopped green onions.

Serve hot with a side of honey mustard dressing. Store any leftovers in the refrigerator for up to 3 days.
