Instructions
Cook the bacon on a griddle or in skillet in batches until crispy, about 3-5 minutes on each side.

Allow the bacon to cool on a cooling rack over a baking pan to catch the grease.
Heat the chocolate chips in a microwave safe bowl for 1-2 minutes, stirring every 30 seconds.

Add the coconut oil and heat again for an additional 15-30 seconds. Stir to combine

Place a sheet of parchment paper on a separate large baking sheet.
Dip a piece of bacon into the chocolate. Use a spoon to drizzle the chocolate onto both sides of the bacon, leaving around 1 inch of space without the chocolate on top.
Place the bacon on the parchment paper line baking pan and repeat the process with the remaining bacon and chocolate.
Place the pan in the fridge to let the chocolate harden fully then serve, about 15 minutes. See post for storage options.
