In a medium saucepan, combine the ingredients for the simple syrup.
½ cup water, ½ cup dark brown sugar, 1 to 2 tablespoons unsulphured molasses, 1 teaspoon ground ginger, ½ teaspoon ground cinnamon, ¼ teaspoon ground nutmeg, ⅛ teaspoon ground cloves
Cook over low heat until the sugar dissolves. Bring to a simmer for 1-2 minutes, then remove from heat.
Cool completely before using.
To Make the Cinnamon Sugar Rim
Pour the maple syrup onto a shallow dish. Dip the rim of a martini glass into the syrup.
1 tablespoon pure maple syrup
Combine the cinnamon and sugar in a separate dish. Dip the rim into the cinnamon sugar, and chill the glass in the fridge until ready to use.
2 tablespoons light brown sugar, ¼ teaspoon ground cinnamon
To Make the Martini
Pour the eggnog, RumChata, Frangelico, and simple syrup into a drink shaker. Gently swirl or shake until mixed. Strain into the chilled cocktail glass.
2 ounces eggnog, 1 ounce RumChata, 1 ounce Frangelico, ½ to 1 ounce gingerbread simple syrup
