In a small saucepan, combine water, brown sugar, molasses, ginger, cinnamon, nutmeg, and cloves.
½ cup water, ½ cup dark brown sugar, 1 to 2 tablespoons unsulphured molasses, 1 teaspoon ground ginger, ½ teaspoon ground cinnamon, ¼ teaspoon ground nutmeg, ⅛ teaspoon ground cloves
Cook over low heat, stirring frequently, until the sugar dissolves completely and the ingredients are well blended.
Bring the mixture to a gentle simmer for 1–2 minutes, then remove from heat.
Allow the syrup to cool completely before using. Store in an airtight container in the refrigerator for up to 2 weeks.
Prepare the Martini Glass (Optional):
If desired, lightly dip the rim of a martini glass in water or simple syrup, then press it into crushed gingerbread cookies or graham crackers to coat. Set aside.
Mix the Martini:
Fill a cocktail shaker with ice.
Ice
Add Irish cream liqueur, vanilla vodka, coffee liqueur, and 1 ounce of the gingerbread syrup.
Swirl gently for 15–20 seconds until the mixture is well chilled.
Serve:
Strain the mixture into the prepared martini glass.
Top with whipped cream and a sprinkle of ground cinnamon, if desired.
