Preheat the oven to 350° F. and line two muffin pans with cupcake liners.
In a large bowl or stand mixer, combine the cake mix, eggs, sour cream, vegetable oil, water, and vanilla until combined. Do not over mix!
15 ¼ ounces red velvet cake mix, 3 large eggs, ¾ cup sour cream, ¾ cup vegetable oil, ¼ cup water, 1 tablespoon pure vanilla extract
Use a ¼ cup measuring cup to fill the cupcake liners. Each liner should be about half full.
Bake the cupcakes for 18-22 minutes or until a toothpick inserted in the center comes out clean.
Remove from the oven and allow to cool completely on a baking rack before frosting. About thirty (30) minutes.
Cream Cheese Frosting
In a large bowl, combine the cream cheese, butter, powdered sugar, milk, and vanilla. Mix with a hand or stand mixer until smooth. Add additional milk by the teaspoon if needed to reach the desired texture and thickness.
8 ounces block-style cream cheese, ¼ cup unsalted butter, 4 cups powdered sugar, 1 ½ tablespoons milk, 1 teaspoon pure vanilla extract
Use a piping bag or decorating tool to apply the frosting to the cupcakes.
Serve and store any leftovers in a sealed container in the refrigerator for up to three (3) days.
