Preheat the oven to 350°F, and line a 9x13-inch baking pan with parchment paper. Set aside.
Add the graham cracker crumbs, Biscoff cookie crumbs, butter, brown sugar and granulated sugar to a bowl and stir to combine then press the mixture into the prepared baking pan.
9 graham crackers, 15 Biscoff cookies, ¾ cup unsalted butter, ¼ cup light brown sugar, 2 tablespoons granulated sugar
Bake for 10 minutes or until the crust begins to darken slightly.
Add the chocolate chips on top and spread it out in an even layer then bake again for 8 minutes. Use the back of a spoon to carefully spread the melted chocolate chips out into a smooth layer.
2 cups chocolate chips
Sprinkle the marshmallows in an even layer, and bake for 10 to 12 minutes or until the marshmallows turn a light golden color on top.
6 cups mini marshmallows
Let the bars set for 30 minutes to an hour then slice and serve.
