Instructions
Heat
2 inches of oil
in a deep skillet to 265°F.

Mix chicken, cheese, black beans, corn, jalapeño, cumin, chili powder, and salt in a bowl.
3 cups boneless skinless chicken breasts,
2 cups Colby Jack cheese,
15 ounces black beans,
1 cup frozen corn,
1 jalapeño,
1 teaspoon ground cumin,
1 teaspoon chili powder,
½ teaspoon salt
Lay out an egg roll wrapper, brush edges with water, and add 2-3 tbsp of filling to the bottom corner.

Roll up, folding in sides, and seal.
Fry in batches for 2-3 minutes until golden and crispy. Drain on paper towels.
Serve with your favorite dipping sauce.
