Preheat oven to 350°F, and spray a 9-inch pie pan with non-stick cooking spray.
In a large mixing bowl combine eggs, diced onions, tomatoes and green chiles, heavy cream, salt, pepper, and chipotle powder. Then, transfer the mixture to the prepared pie plate.
8 large eggs, 1/2 cup white onion, 14.5 ounces diced tomatoes and green chiles, 1 1/2 cups heavy cream, 1/2 teaspoon salt, 1/4 teaspoon ground black pepper, 1/4 teaspoon chipotle powder
Bake for approximately 60 to 75 minutes, and monitor while cooking as top can brown quickly.
Remove and let stand for 5 minutes before serving. Store leftovers in a sealed container, in your fridge, for up to 3-days.
