In a medium saucepan combine the strawberries and sugar. Let it cook over low to medium heat, just long enough for the strawberries to soften (about 7 to 10 minutes).

Combine the cornstarch and water and pour it into the strawberries. Continue cooking the mixture for 2-3 minutes or until the strawberry mixture thickens. Let the berries cool before adding to the parfaits.

Parfait Assembly
First, take an 8-ounce glass and fill ⅓ of the glass with strawberry layer. Add enough cheesecake to fill ⅓ of the glass.
Top those layers with blueberry cheesecake topping. Serve the finished parfaits with garnishments of your choice.
